We keep ending up with competing versions of the same answer and no idea which is current. Do these tools have proper version control, or at least a way to know what's the source of truth?

That solved the "which is current" problem for us. If you specifically need full document-level version history (branching, rollbacks, diffs), confirm that in a demo since vendors differ. Responsive and Loopio have mature versioning as part of workflow management, but for most teams "is this current and traceable" is the real need.
